Inspired by Gordon Matta-Clark’s artist-run restaurant FOOD, which flourished in New York in the 1970s, The Grey Space invites artists and food enthusiasts to come and cook affordable meals as a form of artistic and social expression. Each Dinner Session is a unique experience, with a different guest chef preparing a special menu according to their own concept brought to our kitchen. These Sessions, which encourage communal dining, inspire people from all walks of life to connect and celebrate the joy of being together over a meal.
The Vegan Caucasus Duo consists of Murad and Gulnar, who are both originally from the South Caucasus. They come to our kitchen to present a vegan menu that is inspired and primarily cooked with ingredients from the South Caucasus. Hosting this Dinner Session, the duo is excited to share the tastes, dining, and togethering culture that highly appreciates traditional food knowledge but also acknowledges change and fusion.
The vegan menu commences with the intro meal “Qutab” small wrapped dough with fresh herbs and vegan cheese, enhanced with in-depth taste of the fresh pomegranate, cranberry paste, and sumak. For the main, the Vegan Caucasus Duo present “Ajapsandali,” an elaborate, slow-cooked stew of aubergine, peppers, herbs, tomato, and potato. As a dessert, the duo serves vegan almond “Halva” with nuts, mint and ice cream.
- Doors open at 17.00, Dinner starts at 18.30. The courses are served to all guests at the same time, so please arrive by 18:30 to assure a full menu’s portion.

- Students get 10% discount on the drink menu.

Murad and Gulnar, together the Vegan Caucasus Duo, both grew up in a heavy meat-eating culture. When they lived together in The Hague in 2019, they started experimenting with the vegan/vegetarian fusion of traditional Caucasian recipes. Gulnar, still based in The Hague, and now-London-based Murad find joy in re-creating vegetarian and vegan recipes for traditional meals. Food, more than nutrition, is the duo’s philosophy, and their food forte is slow-cooking, freshness, and knowing their sources. Both Murad and Gulnar are inspired by the organic ingredients of the highlands, aiming to recreate familiar tastes, warmth, and dining culture that fills in the long and cold winter days well.
